Default itouch to touch screen monitor?

ive been farting around with audio set ups for my next car and one thing i am divided on was the head unit. the ones worth getting are expensive. i got the idea of using a ipad and an equalizer for a head unit. it has music, video, navigation and maybe bluetooth(phone) but it can play dvds or support a backup camera.
so i had the idea of using a itouch and a touch screen monitor instead.
using a adapter with thirty pin connecter from one end and usb and audio/ video rca's at the other. video and usb going to the touch screen and audio to an equalizer then amp ext. doing it this way i can get a video in for a backup camera or a external dvd player. only im not sure if this will work; controlling the itouch with a touch screen through usb.
any one know or have the equipment to test?

anything can be done. it just depends on how much effort and customization you are willing to do, and how good you are with circuits and soldering.

the ipod touch doesnt have gps, meaning you need internet unless you get the tomtom car kit. but this kit uses the 30 pin connector at the bottom so i dont think i can get gps and another screen with all the other stuff
