on a few occasions, I’ve felt what seems like a jerking motion in the steering wheel. Not often but a couple of times for sure.

We have to rule out the simple stuff first. Can you verify the pump pulley is spinning properly when you first start up? I'd hate to suggest you replace the pump & then find out it was something as easy a loose or bad belt.
