Would i be right in saying that if i check connectivity from ground to the wire (when it's unplugged from the sender) that it should not connect?

I'm not sure, because that wire may be grounded through the temperature gauge in the cluster.
If you unplug the wire from the sender AND the back of the cluster, then you can do that test.
