I'll take a stab at this.
Your 2005 Accord V6 has two Engine Coolant Temperature (ECT) sensors; ECT sensor 1 and ECT sensor 2. I don't believe the 2003-2004 Accord V6 had ECT 2; but, was added starting for the 2005 - 2007 models.
From reading your posts, doesn't sound like you have a Check Engine Light; so, possibly no diagnostic trouble codes (DTCs). For the gauge reading problem, although, you have no DTCs for the ECT sensors, there may be a chance of a problem with one of the ECT sensors, the ECM, or your instrument gauge. But, check connectors, wire, etc. first.
It is unusual for both radiator fan and A/C condenser fan not to run. Your car has three relays in the cooling system circuit: A/C condenser fan relay, radiator fan relay, and the fan control relay. From looking at the circuit, it looks like both radiator fan motor and A/C condenser fan motor circuits run through the fan control relay. So, my guess would be to check the fan control relay as a possible cause for both fans not running, or possibly a problem with an ECT sensor.
A recommended course of action may be having a qualified mechanic diagnosis the problem(s) and/or getting the factory service manual.

The temperature gauge may be a separate issue from the fans. If it is the ECU, it may possibly affect both. But, the problem may be a faulty instrument gauge, wiring, connector, etc., etc....

I would have your battery/alternator tested at a parts store. Recently, someone on here had a gauge acting like yours and the car battery was the problem. I would also clean all ends of both battery cables.
I would start testing on the two fans for the condenser. Get a volt meter and see if there is 12V to the connector for each fan when the a/c is running.
