Default Weird Over heating issue!!!!PLEASE HELP!!!

Ok here I go I have a 91 honda accord run damn near perfect. In the morning I go out start vehicle. Then go back into house while car warms up ..Then after about 10-15min I start to work I have to drive highway for about 25-30 mile at about 55-60mph.. then I hit town stop at light noticed my temp gauge rise to hot but before it reaches all the way to top I start moving again and temp comes down fast back to normal temp..So after work I changed the thermostat..Next day to work same thing happends, so I turned on the air so both fans will run..I get to work step outside to listen for the fans working I can hear the fan(s) running I turn ignition on my fan main Big fan goes off, I turn my key off the fan comes on... So this time I turn off key, go into work 5-6min later I go out fan still running but as soon as I turn key on fan go off but the temp is way down, so do I need temp fan switch or what...Any help will be greatly appreciated sorry for the long book, but i figured I should give whole sistuation..But remeber this does not happend all the time..someone told me HEAD gasket I hope not..How canI determind if I need a HD gasket or not? Thanks in advance..

I would just make sure that the radiator is full of coolant when the engine is cold. Remove the radiator cap and top off radiator with coolant if necessary.

You said that you can hear both fans running when the a/c is on, but I would open the hood and see if both are running.
